OK ok…now you know that we love low and slow. Grab a glass of wine and take your front-row seat to the Evolution of A Feast! What could be more satisfying? Your feast at legendary status in your guest mind…your a rock star. You love it. Life is good… all is well. So what could be more satisfying than that? Achieving the exact oohs and aaahs from your guest for a dish that’s so ridiculously easy that you can’t even remember making it. That’s a clafouti (kla-foo-tee), a humble French concoction that’s like a Dutch Baby or German pancake–whatever you call it, call it dessert tonight! Get your ovens started! It's happening right now.
Mixed Berry Claflouti:
2 cups mixed berries
1 tbls butter
3 eggs
1/2 teaspoon salt
1/3 cup all-purpose flour
1 cups milk
1/4 tsp vanilla extract
1/2 heavy cream
1/4 cup sugar plus 2 tbs
Preheat the oven to 375 degrees F. Butter a 9- to 10-inch shallow pie plate.
Butter a 9- to 10-inch shallow pie plate and place into the oven to preheat for 4 to 5 minutes.
In the bowl of a mixer fitted with a whisk attachment, blend the eggs, sugar, salt until frothy.
Add milk, cream and vanilla and mix well.
Add the flour and mix until frothy and thoroughly incorporated, 1 to 2 minutes, scraping the sides of the bowl as needed.
Pour the mixture gently into the pie plate over the berries, place in the oven, and bake for 25 minutes, or until the custard has puffed and is set, but still slightly jiggly in the middle. Cover with foil if the top browns too quickly.) Serve warm or at room temperature.
