Sandra's Beef Rice

Oh yes we did..taking it all in, one loving bite at a time until it was completely and utterly devoured. Where was the self control? Not for this dish, because for an evening this dish, this ridiculously simple dish, takes us home.

For my mother, what always comes to mind is  Beef Rice. Two simple ingredients…well actually four because it has to be eaten with green onion and soy sauce! It smells and taste like home. It’s comfort food at it’s finest. 

INGREDIENTS
METHOD

1 1/2lbs Organic ground beef 
2 cups Jasmine rice 
1 3/4 cups water
4 stalks green onions 
Soy sauce 
2 Small Bird’s eye chili (if these chili’s are to hot for you feel free to replace with serranos or jalepenos)
Kosher Salt 
1 tablespoon Olive oil or Avocado oil 


  1. Season ground beef with salt.
     

  2. Heat oil in a large skillet over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat and set aside
     

  3. In a medium heavy bottom pot add rice, water and ground beef. Give it a couple of stirs to make sure it’s mixed well and bring to a boil.
     

  4. When most of the water is visibly evaporated, lower the heat and put the lid on the pot. Cook for 12-15 minutes.
     

  5. While the rice is cooking chop green onions and thinly slice Bird’s Eye chili’s.
     

  6. When rice is done, fluff and transfer to a serving bowl. Top with green onion, chili’s, pat of butter and drizzle with soy sauce.
