Cucumber And Scallion Salad
Cucumbers are in season! Armenian, English, lemon, Persian…and you’ll find them at every farmers market, co-ops and grocery stores galore. Persian cucumbers play the leading role in this cooling salad. It really is a perfect side dish for a hot summer evening. And a no fuss side dish to accompany grilled fish, a bowl of white rice or even homemade sushi! It take no less than 10 minutes to throw it together. Who can argue with that? And it's better the next day. Give it a go, you'll be going back for more, again and again.
Cucumber And Scallion Salad:
1 tsp molten salt
1 tsp sugar
1/4 cup green onions, thinly sliced
1/4 cup rice wine vinegar
1 tsp ground pepper
1 tsp crushed red pepper
1/2 tbs sesame oil

Slice cucumbers thin. You can hand cut them or use a mandoline.

Place them in a bowl, sprinkle the thinly sliced cucumbers with salt. Let stand for about 20 minutes, then drain.

In the same bowl, mix the cucumbers, green onions, sugar, rice wine vinegar, sesame oil, crushed red pepper flakes and finally your ground black pepper. Stir thoroughly.

Refrigerate for 20 minutes or until very cold. Serve.
