Tuesday is like Monday’s ugly stepsister. BUT Taco Tuesday...well It’s a little bright spot in the beginning of the week, it’s simple, easy and everyone makes their own. Start with homemade corn tortillas you can make ahead, an unbelievably, rich rajas con crema, and super simple salsa you can make hot or cold—together with your favorite margarita or beer (optional of course…but we most certainly advise taking part in one or both! )
Corn Tortillas:
2 cups masa harina
1 1/4 cup hot water
1 dash salt
For the Rajas con Crema:
1 pound (3 to 4) poblano chiles, stemmed, halved, and seeded
1 tablespoon olive oil
1 medium sized onion, hlaved and asliced 1/4 inch thick
3 garlic cloves, minced
1/2 tsp nutmeg
1tsp ground pepper
1 tsp kosher salt
1/2 cup heavy cream
1/2 cup heavy cream
1 tbs lime juice
For the Salsa Verde:
1 pound (3 to 4) poblano chiles, stemmed, halved, and seeded
1 tablespoon olive oil
1 medium sized onion, hlaved and a sliced 1/4 inch thick
3 garlic cloves, minced
1/2 tsp nutmeg
1tsp ground pepper
1 tsp kosher salt
1/2 cup heavy cream
1/2 cup heavy cream
1 tbs lime juice
For the Baked Rockfish
3 pound rockfish, skinless fillet
1/2 tablespoon pepper garlic clove
1/4 teaspoon of salt, or to taste
1/2 teaspoon paprika

Dissolve salt into the measured glass of warm water. Pour over the bowl of masa harina slowly, stirring as you go. Taste it, you may want to add a pinch more of salt to your taste.

Mix until combined; smooth but not sticky. Knead/press into a ball. Cover, and let rest for 30 minutes to 2 hours.

Pinch off a golf-ball sized chunk of dough and roll into a smooth ball. Set between two pieces of parchment and start to flatten a bit with your hand.

If you have a press it will make the shaping process a lot quicker and simpler, but if you don’t, never fear. You can use two skillets or two pie plates pressed together to have the same effect.

Cook for one minute on each side in an non-greased frying pan (cast iron is best). Set aside.
